CreateAStir with Nola this festive season

Festive season is a time of relaxation, celebration, exchanging presents, connecting and reconnecting with loved ones, all while eating amazing meals in an atmosphere filled with good cheer.

Families usually have mouth-watering signature dishes that they make during the holidays such as pork with a sticky orange and ginger glaze, turkey on the Weber, roast duck with honey spice glaze, the perfectly roasted chicken, as well as fruit salad with ice cream.

Whether you are still in the process of finalising your crowd-pleasing menu, finding yourself looking for culinary inspiration, or simply want recipes that will help you #CreateAStir and will put you ahead of any other family member in the votes for best holiday season meal, Nola has got you covered with the following recipes.

Creamy and crispy Christmas potatoes

The first of these is Amanda’s potato skins that are stuffed with a whole lot of creaminess (ingredients below). You have to preheat the oven to 180ºC, line and grease a baking tray and rub the potatoes with the oil and salt before placing them on the tray. Next, bake them for an hour or until tender, before cutting them in half, and scooping out the flesh. Be sure to leave a 1 cm border and place the shells back on the tray.

Then, you have to mix the potato mash with the corn, spring onion, cheese, peppadews and ¼ cup of Nola Original Mayonnaise. Spoon the mix back into the potato shells, before baking it in the oven for 10 to 15 minutes or until crispy. Whisk the remaining Nola Original Mayonnaise with the hot sauce and drizzle over the potatoes.

Ruth’s beetroot and apple salad

To make this tantalizing salad, you need to toss cooked quartered beetroot, spinach, apple wedges and onions together. Scatter the pecan nuts over, (if using, as they are optional) and drizzle with the Nola Original Mayonnaise dressing.

The NOLA dressing is also quick and easy to make as you only need to whisk some Nola Original Mayonnaise, red wine vinegar and honey together.

Easy side and concluding dishes

If you love creamy salads to go along with your meat and poultry, Mo’s crispy summer coleslaw will certainly give your salad a summer twist (ingredients below).

Mix the cabbage, carrot, apple and spinach together in a large bowl. Whisk the Nola Original Mayonnaise, buttermilk, lemon juice and fennel seeds together.

Toss the dressing through the slaw and sprinkle over the bacon (if using).

Delicious dessert to cap off any festive meal

For dessert, Jen’s malva pudding (ingredients below) will allow you to stir up something indulgent and treat your (four to six) guests to a South African classic with a Nola twist.

Cream the butter, Nola Original Mayonnaise and sugar together until light and fluffy. Stir in the apricot jam, milk and vinegar, and mix in. Sift in the flour, bicarb, baking powder, as well as the salt and mix well.

Pour into a well-greased baking dish and cover tightly with greased foil. Bake for an hour at 180ºC. In the meantime, melt the butter, sugar and water and stir well. Add in the cream and vanilla essence and bring to a simmer.

Pour over the hot baked pudding as soon it comes out the oven.

Serving suggestion: Serve with ice cream, cream or custard.
